Last sample before we start the harvest on Monday the 7th of April. Our wine maker, Edgado Ibarra, checks the juice color, the acidity and the sugar content of a sample of about 100 grapes on the plot of Cuadro Benegas Vineyard. These grapes are then tested in our laboratory in order to know exactly the PH value, the total acidity and the sugar rate. This year, the alcohol content will probably be around 14°. The Cabernet-Sauvignon and the Bonarda present an intense color and fruits flavors that suggest a complex and structure vintage.
