Select Bonarda

All the attention has been taken to select and press the grapes. The juice is preserved from oxidation and maintained at a temperature of 6/8 °. We want to get from this red grape very present in Argentina (the second most planted) a fragrant Rose, very clear, no residual sugar with good acidity for a beautiful aromatic structure.
The press Rosé is barely developed in Argentina who prefers the “saignée method”, so we hope to get a very different wine, very “New World”!
